Ingredients
- 1 cup packed Medjool dates, pitted
- 1/2 cup chopped almonds
- 1/3 cup dried cranberries
- 1/4 cup shredded coconut, plus more for rolling
- 1 tablespoon ground flax seed
Instructions
In the bowl of a food processor, process dates until they form a paste.
Add almonds, cranberries, coconut and flax seed. Pulse until combined and mixture resembles coarse crumbs.
Using your hands, roll mixture into 1-inch balls. Roll balls in extra shredded coconut and serve.
Notes
Leftover energy balls can be stored in an airtight container in the refrigerator for up to 2 weeks or in the freezer for up to 3 months.

I am always looking for healthy snack recipes for mid-day cravings.. I do love store brought energy bars..But I know how much sugar and preservatives are hidden in them… This recipe is great on so many levels.. Dates are a powerhouse of energy.. Love energy bites! May I ask what type of food processor you have? Mine almost broke when I tried to grind nuts so I have to use a coffee grinder. Works great, but some people don’t like slight coffee taste.Reply

Hi Aida! I use a Cuisinart Food Processor! I have had it for a really long time and I love it because it can handle anything! Coffee-flavored nuts actually sound quite good! I have a coffee grinder as well so I should try that sometime! lol 🙂

I just tried these and your healthy fruit and nut granola bars. But I used 1/4 pumpkin seeds and 1/4 sunflower seeds in the granola bars. They were yummy.Reply
