Crustless Quiche Lorraine

Coat a 9×13-inch baking dish with cooking spray or 1 tablespoon unsalted butter.Thinly slice 2 small red onions. Reserve 6 to 8 onion slices for the top of the quiche. Cut 8 slices thick-cut bacon into 1/2-inch pieces. Cook the bacon in a large skillet over medium-high heat until the fat is rendered and the bacon is beginning to crisp, 8 minutes. Add the onions and cook until softened, 4 minutes. Transfer the cooked bacon and onions to the baking dish to cool.

Dice 1 small sweet onion, 1 small red bell pepper, and 1 small green bell pepper. Clean and slice 4 ounces cremini mushrooms.
